Zoigl beer

The original Zoigl beer (brewing tradition since 1415 AD in Neuhaus) is a bottom-fermented, unfiltered beer which is produced as per the Bavarian purity law in local breweries (still with wood firing). Only the best quality of hop, malt, water and yeast are used. After the brewage has been completed, the brew is poured into an open cooling vat, where it rests and cools over night. The next morning, it is driven home in a huge vat. There it is filled into the fermentation tank (“Kuafn”).

At first, the yeast is added which converts the sugar into alcohol. After approx. 10 days of fermentation, the Zoigl beer is filled into tanks where it has to mature for several weeks. The Zoigl beer is served unfiltered and directly from the storage tank.
